PURPOSE: To obtain a butter-like spread containing a water phase and a specified fat phase with a specified particle size and containing a granular fat solid in a rather high content. CONSTITUTION: This spread is a water-in-oil emulsion spread having (A) a water phase and (B) a fat phase containing fat (mixture). The spread is expressed by a fat solid profile (%) of N5 =40 to 95, N30 =0.1 to 15, N10 =20 to 90, N35 =0 to 5 and N20 =15 to 35, which is obtd. by nuclear magnetic resonance(NMR) measurement at specified temp. The fat part consists of granules having <=20μm average particle size, preferably 3 to 6μm. |
