PURPOSE:To provide the subject additive composed of xylanase and giving rice grain to form a cooked rice having adequate softness, springiness and glutinous property and excellent palatability when added to polished rice grain. CONSTITUTION:The objective additive is composed of xylanase. The additive is preferably further added with a proteinase and lecithin. The additive is added to a rice-cooking water and rice is cooked with the rice-cooking water. |
