PURPOSE:To obtain the subject shaped meat useful for fried cutlet, etc., having excellent binding strength, not to be distinguished juncture with naked eyes and having excellent workability by mixing transglutaminase into plural offal pieces such as domestic animal meat. CONSTITUTION:Plural offal pieces of domestic animal meat or poultry are finely divided and mixed with transglutaminase, then shaped to sheet-like, thus subjected to transglutaminase reaction to afford the aimed shaped meat. |
