PURPOSE:To simplify cooking of 'OKONOMIYAKI (a thin, flat cake of unsweetened batter fried with bits of vegetables)' and to obtain the title patty preservable in cold storage by blending raw materials with steam, kneading by a kneader, rolling dough while smoothing wrinkles and punching the dough into a disklike shape. CONSTITUTION:Wheat flour, water, eggs and seasoning in a given ratio are fed to a main body 2 of a steam kneader 1 for charging of raw material, covers 3 and 4 are fixed to the main body and the raw materials are kneaded with steam while supplying steam from a boiler 6 and controlling by a regulating board 5. The cover 4 is opened, the dough kneaded with steam is transferred to a kneader 8, sent to a rolling machine 10 and rolled while smoothing wrinkles. The flat dough having starch attached to the surface and the back thereof is punched by a punching machine 20 into a disklike shape and packed into weighing bags. |
