PURPOSE:To obtain the title hollow-free fish meat protected from oxidative deterioration and excellent in freshness preservation by forming fish meat pieces in blocks using a pressurized vessel having such a construction that a press plate and a fixed cover plate are mounted on a mold with deaeration holes. CONSTITUTION:Fish meat pieces are put into a mold 2 with deaeration holes 21 followed by applying a binder on the pieces. Thence, a press plate 3 is mounted on the mold 2, into which a pressurizing member 4 expandable in reducing pressure such as a bag filled with air is also put, and furthermore a fixed cover plate 5 is set up thereon, thus resulting in a pressurized vessel. This vessel is then put into a vacuum vessel 6 to evacuate air from the vessel 6, thus obtaining the objective fish meat. |
