NEW MATERIAL:A compound expressed by formula I (R represents formulae II or III) or salt thereof. EXAMPLE:Apioglycyrrhizin. USE:An edulcorant. PREPARATION:A liquorice is extracted at preferably 40-80 deg.C using an organic solvent such as methanol and then the solvent is removed to afford a glycyrrhiza extract. Then the extract is subjected to distribution extraction with water and an organic solvent (example; n-hexane) and the solvent is removed to afford a water-distributed extract. This water-distributed extract is first subjected to reverse-phase silica gel column chromatography and then to normal phase silica gel column chromatography to purify and afford a compound expressed by formula I. |
