PURPOSE:To prevent jellying of fish meat and to obtain a past product having elasticity, crispness, etc., by collecting fish meat from a fish containing jelly meat, bleaching the meat with water, dehydrating and blending the dehydrated meat with plasma. CONSTITUTION:A fish such as flatfish or salmon containing jelly meat is used as a raw material, fish meat is collected, bleached with water and dehydrated. Then the prepared dehydrated water is blended with plasma and optionally shaped, packed or frozen to give ground fish meat. The plasma is obtained by separating plasma components from blood of animal such as cow or chicken and the amount of the plasma added is properly about 0.2-5wt.% based on the dehydrated meat. The ground fish meat blended with the plasma is ground, seasoned, shaped and heat-treated so that a paste product of fish meat can be produced without preparing jellied meat. |
