PURPOSE:To provide an animal meat-like food material with texture of tissue, juicy feeling and integrity by making meat of specific fish into small meat pieces or small meat granules not to destroy tissue structure as much as possible and immersing the in a solution of a salt. CONSTITUTION:Meat of fish such as bonito, tuna, yellowfin tuna, sword fish, common dolphin or yellow tail living in the high-temperature water area and having muscular protein of high temperature stability is processed into small meat pieces having <=7mm thickness and small meat granules having <=7mm diameter so as not to destroy tissue structure as much as possible. Then the small meat pieces or the small meat granules are immersed in 2-10 times as much 1-10mM solution of Ca salt or Mg salt or the solution containing 10-15mM NaCl or KCl as the small meat pieces or the small meat granules by weight for 3-15 minutes and optionally dehydrated to a desired water content. |
