PURPOSE:To provide a color-fading inhibitor of high safety, containing, as an active ingredient for color preservation, kojic acid. CONSTITUTION:The objective color-fading inhibitor for foods to be treated or treated with a color-developing agent and/or coloring matter with kojic acid as an active ingredient. This inhibitor may be used in combination with an antioxidant conventionally used, and the action of the inhibitor can further be enhanced by its combination with or the presence of at least one kind of compound selected from organic acids, inorganic acids and salts thereof, esp. alkali metal salts. One of the typical examples of reducing agents to be combined is an organic acid or inorganic acid used as a food additive (e.g., phosphoric acid, citric acid, malic acid or an alkali metal salt thereof). For said enhancement, it is preferable, in general, that disodium hydrogenphosphate, trisodium citrate or sodium polyphosphate be used. |
