PRODUCTION OF REDUCED CURCUMINOID AND USE THEREOF

NEW MATERIAL:Tetrahydrocurcuminoid expressed by formula I (R1 and R2 are H, OH or alkoxy). USE:A safe antioxidant derived from a natural product and enabling application to food, medicine or cosmetic industry by improving coloring properties by reducing deep yellow color tone of curcuminoids and simultaneously increasing antioxidation activity. PREPARATION:Radix of Curcuma longa is extracted with an organic solvent and the resultant extract (a compound expressed by formula II) is reduced in the presence of hydrogen in an organic solvent by a metal catalyst to provide the reduced curcuminoids (a compound expressed by formula I).
