<p>PURPOSE:To accomplish long-term storage of new rice with its taste retained. CONSTITUTION:The perfectly ripe paddy rice is reaped, allowed to be dried and threshed to obtain unhulled rice grains or unpolished rice grains, which are packed into, e.g., a polyethylene film bag followed by pouring water therein to to such a degree that the contents are hidden, and then sealing the resultant system which is then put to rapid freezing or storage at ice temperature, thus obtaining the objective rice capable of long-term storage and retaining the taste, flavor and glutinousness each peculiar to new rice.</p> |
