PURPOSE:To rapidly cool a food, etc., by housing a package of a filled and hermetically sealed substance to be heated between supporting plates having a housing part in a shape capable of housing the package, fixing the package with a fixing tool, heating the package, removing the supporting plates while applying an external pressure thereto and annealing the package. CONSTITUTION:(A) A substance to be heated, such as white sauce or hamburger steak, is filled in (B) a package, such as a laminated film, and hermetically sealed. The resultant package is then housed between supporting plates 1 having a housing part 4 of nearly the same shape as that of the package, fixed with a fixing tool 3, such as ring tool, thermally sterilized, e.g., at >=100 deg.C, and then placed in a cooling part. The holding tool is subsequently removed while applying an external pressure and the package is cooled while slowly decreasing the external pressure. Thereby, the objective thermal sterilization is carried out. |
