发明名称 PRODUCTION OF INSTANT GRUEL OR 'ZOSUI'
摘要 PURPOSE:To obtain an instant gruel and 'ZOSUI' (porridge of rice and vegetables) without disintegration of rice grains and whole gelatinization even in preservation for a long period after production thereof by adding a specific amount of agar in producing the instant gruel or 'ZOSUI'. CONSTITUTION:Rice, water and, as necessary, various ingredients, seasonings, etc., are put in a heat-resistant container and hermetically sealed. The container is then heated to simultaneously carry out cooking and disinfection (sterilization) and produce an instant gruel or 'ZOSUI'. In the process, agar in an amount of 0.01-0.3% based on the amount of the water used is added thereto. The agar may be powdery or cylindrical agar and the shape thereof is not specified.
