Soybean is soaked into water (three times amount of soybean) at 40≦̸C for 12-18 hrs and crushed at low speed for 5 min. The resulting slurry is boiled at 220-260 F for 0.5-2 min (5-15 psi) and cooled. After extraction to get soybean juice, the soybean milk is treated with tripoly sodium phosphate and then calcium chloride to give a final product. |
