PURPOSE:To facilitate the formation of a hydrogenated edible oil of a low elaidic acid content, suitable as, e.g., a material for margarine by using a hydrogen storage alloy previously allowed to occlude hydrogen gas therein and adding hydrogen desorbed from this alloy to an edible fat or oil. CONSTITUTION:A reaction tank is charged with an edible fat or oil (e.g., soybean oil) and hydrogen storage alloy (e.g., formula I or II) previously allowed to occlude hydrogen gas therein, and the reaction mixture is deaerated and heated with agitation to effect the hydrogenation of the fat or oil. After the reaction, the hydrogenated edible oil of a low elaidic acid content is recovered, while the hydrogen storage alloy is allowed to reocclude hydrogen gas therein for use in the next hydrogenation rum. In this way, the amount of elaidic acid undesirable for nutritional metabolism can be easily decreased, and the temperature dependency of the solid fat content of the hardened oil obtained by the hydrogenation can be decreased. |
