PURPOSE:To obtain in high yield a yeast extract to be used for food flavors, food nutrition enrichment and media for microorganism culture by incorporating a raw yeast with chitin and chitosan which act as a promoter for autodigestion. CONSTITUTION:The objective yeast extract can be obtained by incorporating a raw yeast as a raw material with pref. 0.01-3wt.% of chitin plus chitosan. |
