PURPOSE:To obtain a dietary fiber-enriched miso having high health care effect and good taste by blending common salt and seed water much more than an ordinary method in blending of miso raw material, producing miso softer than ordinary miso and then adding a dietary fiber such as a corn fiber or wheat fiber to the miso. CONSTITUTION:When miso raw materials of steam cooked soybean, rice koji, common salt and seed water, etc., are blended, the common salt and water much more than an ordinary method are blended. Then the blended miso raw material is subjected to fermentation and aging by decomposing enzyme such as rice koji or wheat koji, miso yeast, etc., to produce a miso softer than an ordinary miso. Then a dietary fiber derived from a raw material other than that of miso such as corn fiber or wheat fiber is added to the miso and the blend is prepared in miso having hardness and salt compatible to normal miso to provide the dietary fiber enriched miso. |
