A process for the production of veratral and related alkyl-aryl-ethers, starting from vanillin or similar phenolic compounds, corresponding to the desired ethers, is described, wherein the starting compound is reacted with a base and an alkyl halide corresponding to the desired ether, in an initially aqueous or alcoholic reaction medium, the pH of this reaction medium being maintained constant at about 9.5 +/- 0.5 (aqueous) or about 11 +/- 0.5 (alcoholic), respectively.
