GINKGO EXTRACT-CONTAINING CHOCOLATE

PURPOSE:To obtain a chocolate having effect for preventing and treating cerebral apoplexy and senile dementia and having good flavor and taste by adding ginkgo extract containing flavone glycoside and terpenes to the chocolate. CONSTITUTION:For example, a dried ginkgo leaf is extracted with a water- containing lower alcohol to afford ginkgo extract containing either one or both of terpenes such as ginkgolide or bilobalide and flavone glycoside such as quercetin glycoside or Kaempferol glycoside as main ingredients. Then the ginkgo extract is added to chocolate dough at an amount of 0.01-5wt.%, preferably 0.1-2wt.% to provide the ginkgo extract-containing chocolate.
