发明名称 PRODUCTION OF SNACK FOOD
摘要 PURPOSE: To provide snack food having satisfactory characteristics in appearance, taste, color and fineness by adding aqueous liquid, starchy fine powder and oil to an extrusion starchy collet in a snack size and baking the collet later. CONSTITUTION: The aqueous liquid, starchy fine powder and oil are added to the extrusion starchy collet in the snack size having prescribed initial weight and the moisture content within the range from 5wt.% to 15wt.%. Next, this collet is baked, the content of the collet is lowered less than 2wt.% and the target snack product is provided. Because of this production, the snack can be produced from edible fluid food materials which can be used for extrusion and can be hardened after extrusion. The suitable fluid materials are prepared by using coarse powder, fine powder, frakes or granules of starch base or a starchy product such as the mixture of them.
