PURPOSE:To instantly thicken and to gelatinize a material without requiring high temperature and cooling at high rate of dissolution of gelan gum by blending fine particles of gelan gum with a sealing of metallic ion. CONSTITUTION:Gelan gum is physically ground by using ball mill, hammer, mill or feather mill to give fine particles having <=150mum particle diameter (preferably <=75mum). 100pts.wt. fine particles of gelan gum are blended with usually 1-200pts.wt. sealing agent of metallic ion comprising polymerized phosphate, sodium salt of organic acid such as citric acid or organic compound such as phytic acid and water and stirred for 30-60 seconds to give a thickened gelatinized material. |
