PURPOSE:To obtain an instant thickened gelatinized substance by dissolving a mixture of gelan gum and a sealing agent of metallic ion in water under heating to given an aqueous solution and dehydrating and drying. CONSTITUTION:A mixture of gelan gum and a sealing agent of metallic ion such as sodium metaphosphate is dissolved in water under heating at >=60 deg.C to give an aqueous solution, which is immediately dried by arbitrary dehydrating and drying method such as spray-drying. Rate of thickening and gelatinization may be controlled by selecting the metallic salt such as alkaline earth metallic salt, using glucono delta lactone and by changing the ratio of these substances added. Consequently, a mixture of the metallic salt and a dehydrated and dried substance of an aqueous solution of gelan gum and the sealing agent of metallic ion is mixed with ordinary water or cooled water and stirred for about 30-60 seconds to give a thickening gel of immediate effect type or prolonged effect type. |
