PURPOSE:To prepare a SHAO-MAI (a purse-shaped Chinese dumpling stuffed with meat) having the deliciousness of blowfish and a chewability different from conventional SHAO-MAI and effective in stiffening the stool by adding blowfish meat and blowfish skin to the animal meat to be used as a raw material for the SHAO-MAI. CONSTITUTION:A SHAO-MAI is prepared by a conventional method comprising the mixing of prescribed amounts of animal meat, chopped vegetables, a seasoning, a binder such as dog-tooth violet starch and proper ingredients, wrapping of a lump of the mixture with a pastry skin and the steaming with steam. In the above process, granules or small blocks of blowfish meat and small pieces of blowfish skin are mixed into the animal meat. |
