PURPOSE:To obtain ketchup of citrus fruits without changing color of flesh by using flesh and fruit juice of citrus fruits as raw materials and making into paste under reduced pressure at low temperature. CONSTITUTION:Flesh and fruit juice of citrus fruits such as Chinese Citron, orange or grape fruit are blended with flavor vegetable such as onion, ginger or garlic, a saccharide and optionally further proper amounts of vinegar, salt, spice, etc., and made into a pasty state under reduced pressure at low temperature. |
