The device consists essentially of a rotary plate 6 which includes on its front face articulated arms 7 brought close to one another by cams 11 and springs 22, each one provided with a half-shell 38 which adopts the shape of one of the cervical bones of the head 37 of the slaughtered animal; with a longitudinal tightening device 15, with free rotation, which adopts the shape of the muzzle of the animal; with an articulated actuator cylinder 5 in which the extremity of the end emerging from the movable rod of the cylinder is equipped with a hook 13 intended for pulling the lower jaw of the animal; and with a mechanical splitting device supported by a directable arm 21. Separation of the two halves resulting from the splitting is obtained by means of a slide 9 provided with "rulinas" 10 which is placed on the edge of the cams 11 of the articulated arms 7. <IMAGE>
