PURPOSE: To easily measure the freshness of meat by analyzing, using electrodes, uric acid and hydrogen peroxide produced by causing nucleotidase, nucleoside phosphorylase, and xanthine oxidase to act. CONSTITUTION: A sample meat is homogenized by trichloroacetic acid, and is centrifuged, and its supernatant liquid is neutralized by a NaOH silution. And a part of this solution is incubated under the presence of nucleotidase and nucleoside phosphorylase, and another part of the above-mentioned solution is incubated under the presence of nucleoside phosphorylase. These solutions are led into a measuring chamber 1 containing xanthine oxidase, and uric acid and hydrogen peroxide are measured by a polarograph electrode 6. And a K- value which shows the freshness of the sample can be found by finding the ratio of the measured values of individual solutions. |
