PURPOSE:To produce a processed food of fishes and shellfishes improved in flavor, color tone, physical properties, etc., with moderated strange flavor by containing mannitol or a mannitol-containing fermented liquor in the processed food of fishes and shellfishes. CONSTITUTION:Mannitol of a mannitol-containing fermented liquor prepared by fermentation with lactic acid bacteria is added to raw materials or a production process for a processed food of fishes and shellfishes, such as salted product of the fishes and shellfishes or processed food of fish eggs, or final products so as to provide about 0.1-5% concentration of solid mannitol substance based on the final products. |
