FERMENTED MILK HAVING ANTITUMOR ACTIVITY

PURPOSE:To obtain a fermented milk having antitumor activity by using specific lactic acid cocci capable of producing a capsule mucilaginous substance and Geotrichum.candidum as a starter and fermenting milk or processed milk. CONSTITUTION:Milk or fermented milk is cultured by using Streptococcus.cremoris SBT 0495 (FERM P-10053) and/or Streptococcus.lactis SBT 1209 (FERM P-8308) having characteristics of producing a capsule mucilaginous substance and Geotrichum.candidum SBT 7053 (FERM P-10054) as a starter at 18.5+ or -0.5 deg.C for 20+ or -2hr. When the lactic acidity attains 0.85+ or -0.1% and pH 4.50+ or -0.1, culture is completed and the fermentation liquor is cooled to <=7 deg.C to afford a fermented milk having antitumor activity. The antitumor activity in the resultant fermented milk is further enhanced by the coexistence of the Geotrichum.candidum.
