PURPOSE:To simply obtain gel like foods having excellent water resistance and heat resistance without using an alkaline substance by adding a soluble starch or the starch and other foods to hydrated product of devil's-tongue or devil's-tongue flour and freezing the mixture. CONSTITUTION:A soluble starch or the starch and other foods are added to a hydrated product of devil's-tongue or devil's-tongue flour or food obtained by subjecting the above-mentioned hydrated product to shearing treatment and the mixture is frozen to provide the gel like foods. Furthermore, other saccharide may be used instead of the soluble starch. |
