The invention relates to a process for the production of a relatively low-alcohol beverage from a relatively high-alcohol beverage, characterised in that the relatively high-alcohol beverage is divided by vacuum evaporation into a distillate containing water, alcohol and aroma substances and a concentrate reduced in alcohol, in that aroma substances are extracted from the distillate and mixed with the concentrate, and in that the mixture is further processed to give the relatively low-alcohol beverage.
