The invention relates to a process for producing sausage or like foods, in particular for garnishing or decoration and an apparatus for carrying out this process. In order that small amounts of sausage, but also other foods, in particular for garnishing and decoration, can be produced by hand at reasonable expense, according to the invention it is provided that the sausages, immediately after removing the sausage skin successively of some sausages of diverse sausage varieties, are divided into a plurality of pieces by a cut in their longitudinal direction, whereupon the individual pieces of the different sausage varieties are pressed together with a binder in a shared shrink casing to form a uniform sausage. To carry out this process it is preferred that, to cut the sausages in their longitudinal direction, a knife having a plurality of blades is used, which blades are connected together in a frame and are connected to the frame, and that on the inner edges of the frame, shell-shaped holders guide the blades which are arranged at the top and bottom in grooves of holder plates. A combination sausage results from this which can be composed of the most diverse known sausage varieties which are not, however, mixed together but are nevertheless firmly joined together and are therefore highly suitable for garnishing and decoration.
