Cutter knives having cutting-edge sections spherically ground on one or both sides are arranged in a horizontally rotating cutter ring dish and are situated on a shaft which is stationarily mounted and extends in the cord direction of the ring dish. In order optimally to take account of the different peripheral speeds at the cutting-edge sections, four cutting-edge sections (A-D) are provided, which, proceeding from the knife point, are constructed as follows: the first cutting-edge section (A) most remote from the shaft is spherically ground on both sides and has a cutting edge (5), the radius of which corresponds to the cross-sectional radius of the ring dish (6). The second cutting-edge section (B) which adjoins the first cutting-edge section (A) is spherically ground on one side on the delivery side and has a cutting edge (7), the radius of which is substantially smaller than the cross-sectional radius of the ring dish (6). The third cutting-edge section (C) which adjoins the second cutting-edge section (B) is spherically ground on both sides and has a straight cutting edge (8). The fourth cutting-edge section (D) which is situated nearest the shaft is ground on one side on the delivery side and has an arcuately convex cutting edge (9). The cutter knife (1) achieves a high quality of the sausage filling with an optimal fineness of the meat material, and, furthermore, a uniform grain size together with clear cuts in the manufacture of long-lasting or raw sausages.
