The dioxane-1,3 ones-4 of the invention may carry different substituents, in particular hydrocarbonated substituents, in positions 2, 5 and 6; in particular, derivatives carrying a functional group in 5 are highly attractive. The preparation comprises condensation of a beta -hydroxy carboxylic acid with an aldehyde, ketone or acetal. Application: production of beta -hydroxylated amino-acids.
