PURPOSE:To obtain the present food of novel eating feel with spongy texture by forming a pasty product containing fish meat and gluten to a desired shape followed by heating treatment containing initial rapid heating. CONSTITUTION:A pasty product comprising fish meat and gluten is formed to a desired shape, and the resultant form is put to heating treatment containing initial rapid heating (e.g., plunged into an oil at 160 deg.C and heated for ca. 3min), thus obtaining the objective processed food. |
