A method of deacidifying an L-malic acid containing fruit (e.g. apples, plums, apricots, grapes and kiwifruit) or vegetable (e.g. tomatoes) based medium (and a medium e.g. puree, pulp, juice or pieces thus sweetened) which comprises subjecting the medium to a mutant of strain Schizosaccharomyces malidevorans #442 (CBS 5557) (or a substantially equivalent strain), which mutant requires the presence of both (a) L-malic acrid and (b) glucose or fructose for growth, and which is capable of completely utilising L-malic acid when grown on a matrix of L-malic acid, glucose at concentration of greater than 10% by weight, a nitrogen source, vitamins and a pH indicator having a gradual colour change over the pH range of at least about 3.8 to 5.4, said method resulting in a deacidified (sweetened) at least substantially non-alcoholic fruit or vegetable based medium. |
