The invention relates to a process and apparatus for expanding starch-containing products. It can be used in the foodstuffs industry for expanding starch-containing products irrespective of their form. This process ensures a high quality of the expanded starch-containing products. The starch-containing product is treated in the earth's gravity or in a centrifugal field or in both simultaneously with a hot gas/vapour mixture which flows at high velocity, approximately at right angles to the direction of action of the field used, into the chamber in which the starch-containing product expands. A velocity component opposite to the direction of the field is imposed on it therein.
