PURPOSE: To provide a crispy and pleasant fruit or vegetable chip extremely close to an initial color by immersing the slices and small pieces of fruits or vegetables in sugar syrup, partially pre-drying them, then frying them in oil under vacuum and drying them. CONSTITUTION: The fruits or vegetables such as apples, pears and mushrooms, etc., are washed and then cut and the slices or the small pieces are formed. Then, the slices or the small pieces are immersed in the sugar syrup obtained from grains containing sugar such as sugar canes and corns, etc., and penetratively dried and the slices or the small pieces whose dried material content is more than 30g per 100g are obtained. Thereafter, by frying the dried slices or small pieces in the oil such as soybean oil and peanut oil, etc., under the vacuum at the temperature of 80-130 deg.C for 0.5-4 minutes and attaining the residual moisture content of 4g at maximum per 100g, the target chip is obtained. |
