PURPOSE:To obtain the subject SOMEN (a kind of very thin white vermicelli made of wheat flour) having excellent taste and good for health, with shortened preparation steps, by mixing high-gluten wheat flour with salt, aging the mixture, forming the obtained lump in the form of a string at a specific temperature under application of a food oil, stretching the string at or below normal temperature to obtain thin string, drying at a low temperature and cutting to a prescribed length. CONSTITUTION:The objective SOMEN can be prepared by mixing high-gluten wheat flour with salt of an amount less than the salt content of conventional SOMEN by about 35-50%, aging the mixture for several hours, keeping the obtained lump at about 30-38 deg.C, forming in the form of a string under application of a food oil, stretching the string at or below normal temperature to obtain thin string, drying at a low temperature and cutting to a prescribed length. |
