The characterisation of alkyl polyglycosides is carried out using cumbersome and lengthy analytical methods (gas chromatography after derivatisation, etc.> This rapid characterisation is based on a three-phase equilibrium, which is established rapidly, of alkyl polyglycoside, cosolvent, hydrophobic organic solvent and water or aqueous salt solution whose salinity range is dependent on the respective structure of the alkyl polyglycoside. The invention allows the rapid characterisation of alkyl polyglycoside mixtures resulting from synthesis.
