摘要 <p>PURPOSE:To preserve vegetables and fruits in fresh state over a long period at a low cost by lowering the oxygen concentration of air using an apparatus capable of arbitrarily adjusting the oxygen concentration of air and simultaneously controlling the CO2 generated by the respiration of the vegetables and fruits. CONSTITUTION:Vegetables and fruits such as SHIITAKE mushroom are charged into a storage chamber 10. The oxygen concentration in the storage chamber is lowered by operating a pressure-regulation valve 3 of an apparatus 1 for generating air having variable oxygen concentration. At the same time, the concentration of carbon dioxide generated by the respiration of said vegetables and fruits 12 is controlled to facilitate the preservation of vegetables and fruits without necessitating particular gas, a combustion apparatus, scrubber, etc.</p>
