The method for preparing improved KIMCHI usig leuconostoc mesenteroides, pediococcus cerevisiae, Streptococcus faecalis, Lactobacillus plantarum, Lactobacillus brevis etc. is presented. Thus, Leu. mesenteroides is inoculated in the medium containing 5g of beef extract, 10g of yeast extract, 20g of sugar and 10g of glucose in 1l of water and cultured at 37≦̸C for 2 days. The culture broth is lyophilized and pulverized. The above powder is mixed with mixed 50g of powdered taffy and 10g of soy protein. KIMCHI is prepared using the above mixture as an additive. |
