In the prepn. of a cyclodextrin (I) by hydrolysis of a starch feedstock in the presence of a cyclodextrin glycosyltransferase (II), hydrolysis is effected in the presence of a (I)-enhancing water-sol. solute (III) comprising (a) 5-40 wt.% of an org. solute; and/or (b) 0.1-2.0 molar salt of an oxanion selected from halide perchlorate, thiocyanate and pentavalent P.
