In the main patent it is proposed to steam the Jerusalem artichoke tuber and process it to form a pulp and to process this with cereal flour to form a dough for a bakery product. The bakery product is lighter than a bakery product which is produced with Jerusalem artichoke flour (obtained from raw Jerusalem artichoke tuber). In addition the flavour is considerably improved; the typical somewhat unpleasant Jerusalem artichoke flavour is lost. In the present application it is proposed to utilise the advantageous effect on flavour to a further extent, in addition the similar action of raw, if necessary concentrated, Jerusalem artichoke press juice. According to the invention it is provided that a dough is produced and is shaped using a secondary product of steamed Jerusalem artichoke tuber and/or press juice from raw Jerusalem artichoke tuber together with other binding constituents. In this way, depending on the other constituents used, the most diverse types of foods can be produced, e.g. noodles. |
