Long-chain carbon compounds having vicinal diol groups are prepared by reaction of epoxy compounds from the group comprising epoxidised unsaturated C16-C22-fatty alcohols, epoxidised esters of unsaturated C16-C22-fatty alcohols with C2-C5-monocarboxylic acids, epoxidised unsaturated C16-C22-fatty acid esters, epoxidised unsaturated C16-C22- fatty acid glycerides and epoxidised C8-C22-alkenes with water. This process produces the desired vicinal diols in a smooth reaction if the epoxy compounds are hydrolysed at temperatures of 180 to 250 DEG C and a pressure of 15 to 40 bar in the absence of compounds catalysing the ring opening of oxirane groups and of organic solvents.
