PURPOSE:To lighten texture and improve spreading property and heat resistance by rapidly cooling and kneading in-oil fine particle dispersing type food kept to melted state, introducing an inert gas thereto, blending the food while stirring and uniformly dispersing fine void. CONSTITUTION:Oils and fats are heated and melted to about 60 deg.C. A food raw material is added thereto and blended while stirring at 50-60 deg.C and then pulverized and crushed. Then in-oil fine particle dispersing type food kept to molten state is rapidly cooled and kneaded by bringing into contact with a contact face kept to 0--30 deg.C to plasticize the food. An inert gas is introduced to the plasticized in-oil fine particle dispersing type food and then the food is charged into an agitator, where agitation is carried out to provide the void- containing in-oil fine particle dispersing type food. Furthermore, various kind of flavors, food flavor and seasoning can be properly added to the food in order to improve flavor of the above-mentioned food. |
