<p>Malto-oligosaccharide compositions which contain up to about 40 % maltohexaose by weight are produced from starchy substrates and maltodextrins by a simple, one-step hydrolysis with certain thermostable α-amylase from Bacillus stearothermophilus. This process is particularly useful in the production of novel compositions with properties that will lead to new applications in both food and nonfood industries.</p> |
