PURPOSE:To prepare a low-calorific sweetener, beta-1,3-glycosylstevioside free from bitter or disagreeable taste, and having mild sweetness, by using a beta-1,3-glucosyl transferase or microorganisms having beta-1,3-glucosyl transfer activity. CONSTITUTION:An aqueous solution or suspension of stevioside and a beta-1,3- glucosyl saccharide compound such as curdlan, pachyman, laminarin or their partial decomposition products, is made to react with an enzyme having the activity to transfer glucose from a beta-1,3-glucosyl compound to stevioside, i.e. beta-1,3-glucosyl transfer activity, e.g. laminarinase (E.C.3.2.1.6), microorganisms capable of producing said enzyme or a cellulase preparation, usually at 3-10 pH and 20-70 deg.C.
