PURPOSE:To obtain the title food enabling storage for a long period, ensured to be thawed with hot water in a short time, by thawing, with water a meat-like protein material outstanding in fibrous structure produced by extrusion cooking followed by frying and then drying. CONSTITUTION:A raw material, consisting mainly of the protein from seeds of e.g., soybeans, peanuts, rape, incorporated with, if needed, vegetable protein such as gluten, and/or animal protein such as albumen or casein is put, under an aqueous system (pref., 10-80wt.% in water content in the raw material), to extrusion cooking (normally at 70-250 deg.C under a pressure of 1-100kg/cm<2>) using a twin-screw extruder to produce a meat-like protein material (pref. 10-50mm in diameter) outstanding in fibrous structure with dense texture. This meat-like protein material is then immersed in pref. 2.5-10 times amount of water of hot water at normally 10min - several hours. Thence, 3-14wt.% of powder for frying without coat is attached to the above protein material followed by frying at 125-180 deg.C within 3min and then drying through e.g., lyophilization, microwave heating to <=5wt.% in water content, thus obtaining the objective food. |
