In the area of fruit juice treatment with respect to mineral content, only total demineralisation or addition of specific minerals has been practised until now. In certain illnesses, consumption of fruit juices has an adverse effect on the patient. Some patients suffering from kidney complaints and those on dialysis are allowed to consume only very low amounts of potassium. As the natural potassium content in fruit juices is high, these patients are not allowed to drink fruit juices. This has the effect, however, that they do not benefit from the other constituents of fruit juices that have positive physiological effects. Using the invention, it is now possible, by means of a calcium charged cation exchanger (polystyrene having sulpho groups crosslinked using 8% of divinylbenzene) to reduce selectively the content of potassium. A reduction to approximately 30% of the original content has been achieved up to now in apple juice. |
