<p>Fermentation tank of the type consisting of a vertical barrel (1) closed by a roof (2) provided with a chimney (3). This tank is characterised in that the immersion of the fermenting solid phase (4) situated above the liquid phase (5) in the said tank is carried out with the aid of at least one inflatable chamber (6) and of a support (7) and joined by connecting means (8) to a system for feeding, at a controlled temperature, water or compressed air, this said inflatable chamber (6) being introduced under the inner surface (9) of the said roof (2) through the external opening of the said chimney (3). This invention can be applied especially for the "dip-gauging" operation performed during the fermentation of grapes in these said tanks. <IMAGE></p> |
